Preparation
  • Mix Yumgo White powder with water to rehydrate it.
  • Assemble Yumgo White powder rehydrated using a robot
    pastry chef.
  • Add the granulated sugar gradually.
  • Gradually add the icing sugar using a spatula or the whisk of a food processor.
  • Poach the meringues.
  • Cook at 90°C for several hours.
  • Let cool.
