After rehydration: 0–6 °C, consume within 7 days.
How does it work?

Equivalent of one egg white

3 g powder + 27 g water

= 10.5% ratio

72g sachet — equivalent to 24 egg whites

72 g powder + 614 g water

= 10.5% ratio

Professional format 1 kg — equivalent to 315 egg whites

1 kg powder + 8.5 kg water

= 10.5% ratio


Weigh the powder and cold water. Blend with an immersion blender until a homogeneous mixture is obtained.
Incorporate the same amount of rehydrated Yumgo as egg whites into the recipe.
Rehydrated Yumgo White can be used directly, without additional steps.

If your recipe requires whipped whites: pour the rehydrated Yumgo into a stand mixer.
Whip at maximum speed for 5 minutes — the foam should be firm and stable.
Use a fat-free liquid for whipping.

Rehydrate only the amount you need: the powder lasts for 24 months, so you don't waste anything.
Yumgo White + Yumgo Yellow do not replace a whole egg.

Does Yumgo egg white contain the same amount of protein as an egg white?

The nutritional values of Yumgo products and eggs are very similar. Yumgo egg white therefore has a protein intake equivalent to that of an egg white.

On the other hand, Yumgo powders and liquids also have a fiber content that is non-existent in eggs.

Can I beat egg whites like I do with eggs?

Yes! Besides, Yumgo White has a greater foaming capacity than the egg, so it will be easier to beat egg whites with Yumgo than with an egg. After mixing Yumgo Powder and water, beat your mixture until stiff for 5 minutes.
