Soft Vegan Madeleines – Recipe with Yumgo Whole Egg

Discover this recipe for soft, golden vegan madeleines made without eggs or animal products. Thanks to Yumgo Whole Egg, our plant-based egg substitute, you’ll achieve a light and delicious texture, perfect for breakfast or afternoon tea.

Rehydrate the Yumgo Whole Egg with the indicated amount of water until smooth and fluid.
Add the liquid ingredients and sugar
In a mixing bowl, add the following to the Yumgo mixture: sugar, plant-based milk and vanilla extract. Mix until fully combined.
Then add the dry ingredients: flour and baking powder. Mix gently until you obtain a smooth, lump-free batter.
Pour the melted plant-based butter (or melted margarine) into the batter. Mix well until smooth and evenly incorporated.
Preheat your oven to 210°C (410°F).
Pour the batter into lightly greased madeleine molds.
Bake for 10 minutes, until the madeleines are golden and slightly domed.
