Soft Vegan Madeleines – Recipe with Yumgo Whole Egg

- Rehydrate the Yumgo Whole Egg with the indicated amount of water until smooth and fluid.
- Add the liquid ingredients and sugar
- In a mixing bowl, add the following to the Yumgo mixture: sugar, plant-based milk and vanilla extract. Mix until fully combined.
- Then add the dry ingredients: flour and baking powder. Mix gently until you obtain a smooth, lump-free batter.
- Pour the melted plant-based butter (or melted margarine) into the batter. Mix well until smooth and evenly incorporated.
- Preheat your oven to 210°C (410°F).
- Pour the batter into lightly greased madeleine molds.
- Bake for 10 minutes, until the madeleines are golden and slightly domed.
