250g milk or soy milk

250g 35% cream or vegetable cream

85g of sugar

from Yumgo Yellow Powder 1kg
+ 78g of water and 11g of rapeseed oil (to rehydrate the powder)

Preparation
  • Boil the cream with the milk and vanilla, leave
    infuse.
  • Mix Yumgo Yolk Powder with water and rapeseed oil to make it
    rehydrate.
  • Mix rehydrated Yumgo Yolk Powder with the sugar.
    Add it to the first preparation and bring everything to
    boil for 3 minutes.
  • Pour the mixture into small containers.
  • Cook for 45 minutes to 1 hour in an oven at 100°C.
  • Store for 30 minutes at room temperature.
  • Leave for 2 hours in the refrigerator.
  • Sprinkle the preparations with brown sugar then caramelize
    with a blowtorch.
