250g milk or soy milk

250g 35% cream or vegetable cream

85g of sugar

from Yumgo Yellow Powder 1kg
+ 78g of water and 11g of rapeseed oil (to rehydrate the powder)

Preparation
  1. Boil the cream with the milk and vanilla, leave
    infuse.
  2. Mix Yumgo Yolk Powder with water and rapeseed oil to make it rehydrate.
  3. Mix rehydrated Yumgo Yolk Powder with the sugar.
    Add it to the first preparation and bring everything to
    boil for 3 minutes.
  4. Pour the mixture into small containers.
  5. Cook for 45 minutes to 1 hour in an oven at 100°C.
  6. Store for 30 minutes at room temperature.
  7. Leave for 2 hours in the refrigerator.
  8. Sprinkle the preparations with brown sugar then caramelize with a blowtorch.
