  • Store at room temperature.
  • After rehydration, keep cool (0 - 6°C) and consume within 3 days.

How does it work?

  • Mix the water, powder and oil with a hand blender until smooth.
  • Use the same amount of rehydrated Yumgo Yolk as egg yolk in recipes.
  • Example: dosage at 11% → 110g of Yumgo Yolk + 110g of rapeseed or sunflower oil in 780g of cold water (replaces 50 egg yolks). Dosage may need to be adjusted according to water quality.
  • To obtain a gelling (custard, crème brûlée, etc.) bring the mixture to the boil during the recipe. Gelling takes place when the product cools.
  • The mixture of Yumgo White and Yumgo Yolk does not replace the whole egg.
  • After rehydration, keep cool (0-6°C) and consume within 3 days.

How do Yumgo products work?

The properties of the egg are multiple. The white has foaming, emulsifying and stabilizing properties. The yolk has emulsifying and coloring properties, and the whole egg, for its part, has binding and coagulation properties.
All these properties are found in several plant-based products that make up Yumgo products.

How to use Yumgo Yolk powder?

To replace 1 egg, mix 2g of Yumgo Yolk with 16g of water and 2g of neutral oil and incorporate the mixture into your preparations.

Why do I have to mix the Yumgo Powder preparation in a hand blender before making my recipe?

Our product can cause the appearance of small lumps that will be completely eliminated with the use of the hand blender. With this process, you ensure the proper development of all the properties of the egg and no lumps in your recipes.

Can I rehydrate with something other than water for Yumgo Yolk ?

For Yumgo Yolk, you can replace the water with vegetable milk.
If the recipe contains liquids, it is possible to use these liquids to rehydrate Yumgo Powder and thus reduce rehydration.

What oil should I use to rehydrate my Yumgo Yolk?

We recommend using a neutral oil such as rapeseed oil or sunflower oil but you can use any oil you like.

How long does Yumgo Yolk Powder last?
