  • Garantit des coques de macarons pleines avec l’utilisation de Yumgo Blanc poudre.
  • Sans allergènes majeurs.
  • Simple à utiliser. 
  • Propriétés : stabilisante, liante, absorbante.
  • DDM : 24 mois après la production (à la sortie de l’usine).
  • A conserver à conserver dans un endroit sec, à l'abri de la lumière et de l’humidité.

UTILISATION

  • Dosage conseillé : 2 à 5% du tant pour tant dans la recette de macarons.
  • 1 kg de fibre permet de réaliser environ 3 850 coques de macarons de 5g pièce.
  • Mélanger la fibre de pomme de terre avec le tant pour tant de votre appareil à macarons.
  • Le tant pour tant et l’appareil à macarons seront plus denses avec l’ajout de la fibre de pomme de terre.

Are Yumgo products suitable for people with food allergies?

Let's be clear: our products do not contain any material of animal origin!

Yumgo's generic range is fully VEGAN certified and does not contain any of the 14 major allergens. It is also gluten-free and soy-free.

Our mayo contains Dijon mustard and therefore has mustard as the only allergen.

Our dark chocolate & hazelnut cookies contain wheat flour and therefore gluten, soy and hazelnuts.

Our cacao chocolate cookies contain wheat flour and therefore gluten and soy.


Can I make all recipes that contain eggs with Yumgo?

Our product is not an egg. Yumgo products have been developed to replace eggs in all recipes. However, some recipes may be difficult to reproduce with Yumgo. You can view all our recipes on our website.

For example, our Yumgo Yolk contains a natural gelling agent that will gel when cooked. It will therefore not be possible to reheat a hollandaise sauce or other hot sauce without it gelling. It will also not be possible to freeze the preparation because of the starch and the natural gelling agent.
We also do not recommend using Yumgo Whole to make an omelet or scrambled eggs.

Can Yumgo White be used to make cocktails?

Yes, of course, the abundant properties of Yumgo White are perfect for making cocktails. You will also find cocktail recipes on our website

Can I make an omelette or scrambled eggs with Yumgo products?

Some of our customers do this and are very happy with it. As for us, we have not yet found THE recipe that suits us perfectly. This product is under development and you will hear about it when we are ready.

Can Yumgo products be frozen?

Yumgo powders and liquids can be frozen.
On the other hand, do not freeze our mayo or our cookies.

If I mix Yumgo yolk and white, can I use this mixture as Whole Yumgo?

Unfortunately, no, you will not find the properties of the whole egg by mixing the yolk and the white of Yumgo. Don't panic, that's why we developed Yumgo Entier.

Why do I always have to use cold liquid?

Rehydration with a cold liquid allows the mixture to ideally develop all its properties.
