How it works

For 1 litre of Yumgo mousse

45 g powder + 955 g cold water

= 4.5% · equivalent to 33 egg whites

Professional format 1 kg

1 kg powder + 21.2 kg cold water

= equivalent to 740 egg whites

    Pour the powder and cold water into a container. Mix with an immersion blender until a smooth mixture is obtained.

    Pour into a stand mixer. Whisk at maximum speed for at least 3 minutes — the mousse should be firm and glossy.

    Incorporate into the recipe using the same quantity as egg whites.
  • After rehydration: store in the refrigerator (0–6 °C) and consume immediately.

🍫 Recipe — Vegan Chocolate Mousse

Cold water 955 g
Dark chocolate (melted, lukewarm) 300 g
Sugar (brown sugar) 60 g

    Melt the chocolate in a double boiler or microwave. Let cool slightly.

    Mix Yumgo powder and cold water with an immersion blender until a smooth liquid is obtained.
  3. 3
    Pour into the mixer with the sugar. Whisk at maximum speed for at least 3 minutes — the mousse should be firm and glossy.

    Fold in the lukewarm chocolate with a spatula, gently lifting to avoid deflating the mousse.
  5. 5
    Portion into verrines and let chill for 2 hours in the refrigerator before serving.
💡 Tip: The chocolate must be lukewarm when incorporated — if too hot, it will deflate the mousse. For a lighter result, incorporate in two stages.

Use

Can I make all recipes that contain eggs with Yumgo?

Our product is not an egg. Yumgo products have been developed to replace eggs in all recipes. However, some recipes may be difficult to reproduce with Yumgo. You can view all our recipes on our website.

For example, our Yumgo Yolk contains a natural gelling agent that will gel when cooked. It will therefore not be possible to reheat a hollandaise sauce or other hot sauce without it gelling. It will also not be possible to freeze the preparation because of the starch and the natural gelling agent.
We also do not recommend using Yumgo Whole to make an omelet or scrambled eggs.

Can Yumgo White be used to make cocktails?

If I mix Yumgo yolk and white, can I use this mixture as Whole Yumgo?

Unfortunately, no, you will not find the properties of the whole egg by mixing the yolk and the white of Yumgo. Don't panic, that's why we developed Yumgo Entier.

Why do I always have to use cold liquid?

Rehydration with a cold liquid allows the mixture to ideally develop all its properties.
