How it works
Dosage
For 1 litre of Yumgo mousse
45 g powder + 955 g cold water
= 4.5% · equivalent to 33 egg whites
Professional format 1 kg
1 kg powder + 21.2 kg cold water
= equivalent to 740 egg whites
Preparation

1Pour the powder and cold water into a container. Mix with an immersion blender until a smooth mixture is obtained.

2Pour into a stand mixer. Whisk at maximum speed for at least 3 minutes — the mousse should be firm and glossy.

3Incorporate into the recipe using the same quantity as egg whites.
- After rehydration: store in the refrigerator (0–6 °C) and consume immediately.

Steps

1Melt the chocolate in a double boiler or microwave. Let cool slightly.

2Mix Yumgo powder and cold water with an immersion blender until a smooth liquid is obtained.

3Pour into the mixer with the sugar. Whisk at maximum speed for at least 3 minutes — the mousse should be firm and glossy.

4Fold in the lukewarm chocolate with a spatula, gently lifting to avoid deflating the mousse.

5Portion into verrines and let chill for 2 hours in the refrigerator before serving.
