  • Replaces egg yolk.
  • 100% plant-based.

  • Perfectly replaces egg yolk in your pastry cream, crème brûlée, mayonnaise, etc.
  • A short list of ingredients.
  • A reduced carbon footprint compared to the egg.
  • Properties: emulsifier, binder, coloring, gelling agent.
  • DDM: 18 months after production (at factory exit).
  • Store at room temperature.
  • After rehydration, keep cool (0 - 6°C) and consume within 3 days.

How does it work?

  • Mix the water, powder and oil with a hand blender until smooth.
  • Use the same amount of rehydrated Yumgo Yolk as egg yolk in recipes.
  • Example: dosage at 11% → 110g of Yumgo Yolk + 110g of rapeseed or sunflower oil in 780g of cold water (replaces 50 egg yolks). Dosage may need to be adjusted according to water quality.
  • To obtain a gelling (custard, crème brûlée, etc.) bring the mixture to the boil during the recipe. Gelling takes place when the product cools.
  • The mixture of Yumgo White and Yumgo Yolk does not replace the whole egg.
  • After rehydration, keep cool (0-6°C) and consume within 3 days.

Can I make all recipes that contain eggs with Yumgo?

Our product is not an egg. Yumgo products have been developed to replace eggs in all recipes. However, some recipes may be difficult to reproduce with Yumgo. You can view all our recipes on our website.

For example, our Yumgo Yolk contains a natural gelling agent that will gel when cooked. It will therefore not be possible to reheat a hollandaise sauce or other hot sauce without it gelling. It will also not be possible to freeze the preparation because of the starch and the natural gelling agent.
We also do not recommend using Yumgo Whole to make an omelet or scrambled eggs.
