🥚 Why did we create Yumgo?

It all started with a simple observation: eggs are everywhere in our diet... and they are even the most consumed animal protein in the world!

But they pose many challenges:

  • Their environmental impact is high (emissions, water consumption, intensive chicken farming).
  • They are one of the major allergens in Europe.
  • Their supply is unstable and their prices fluctuate sharply, especially in recent years.
  • They exclude a growing proportion of consumers (vegans, vegetarians, religious convictions).

Yet, professionals – pastry chefs, chefs, industrialists – need a reliable, technical, stable ingredient that plays the same roles: binding, emulsifying, aerating, texturizing.

This is the mission we wanted to pursue with Yumgo.
