187.5g Water (37.5%)
137.5g Sugar (27.5%)
137.5g T65 flour (27.5%)
1. Mix Yumgo Sponge Mix with the sugar.
2. Add the water, then blend if necessary using an immersion blender.
3. Whisk the mixture with a stand mixer at maximum speed for 10 minutes, until light and airy.
4. Gently fold in the flour.
5. Pour the mixture onto a baking tray or into a mould.
