THE OMELETTE
13 g Yumgo Plant-based Omelet
13 g sunflower oil
73 g water


The Egg Salad
100 g omelet
(already prepared and cooled)
8 g raisins
60 g Yumgo mayonnaise
20 g celery stalks
2 g fine salt
Freshly ground pepper


ASSEMBLY
8 slices of dark bread with seeds
260 g of egg salad (prepared above)
Spinach shoots

Preparation

Steps

  • The omelet: in a bowl, whisk together the Yumgo omelet mix, water and sunflower oil until you obtain a homogeneous mixture.
    Cook the mixture in a pan like a classic omelet with a little fat. Let it rest for 1 minute, then refrigerate until ready to use.

  • Egg salad: In a bowl, cut the Yumgo omelet into irregular pieces. Add the Yumgo mayonnaise, the chopped celery, the raisins, salt, and pepper. Mix well.

  • Assembly: Spread each slice of dark bread with a little Yumgo mayonnaise. On half of the slices, place a few spinach leaves. Distribute about 65g of egg salad over the slices.
