Vegan Thyme & Lemon Madeleines – Soft and Refreshing
A classic French pastry reinvented in a vegan version! These thyme and lemon madeleines combine the irresistible softness of the batter with the bright citrus freshness of lemon and the delicate aroma of thyme. Finished with a glossy, fragrant glaze, they are perfect for an elegant sweet break.
Step 1: Madeleine Batter
- The day before, heat the margarine with the lemon zest and thyme. Let it infuse.
- Rehydrate the whole Yumgo powder by mixing it with water.
- Add the sugar, milk, and vanilla, and whisk well.
- Incorporate the sifted flour and baking powder.
- Add the infused melted margarine (make sure it is not hot) and mix until smooth.
- Fill greased and floured madeleine molds if needed.
- Bake for 3 minutes at 210°C (410°F), then reduce the temperature to 180°C (350°F) and finish baking (3–5 minutes depending on size).
- Let cool before glazing.
Step 2: Fragrant Glaze
- Finely chop the fresh thyme.
- Mix the powdered sugar with the chopped thyme, a little lemon juice or zest, and adjust with a few drops of water if needed to obtain a glaze that coats the madeleines without being too runny.
- Lightly dip the madeleines or brush them with the glaze.
- Dry for 1 minute in the oven at 180°C (350°F) to set the glaze and achieve a beautiful shine.
Chef’s Tip
For an even fresher touch, add a few drops of lime juice to the glaze or sprinkle a little lemon thyme just before serving.
