Vegan Peach Tart – Fruity Egg-Free and Dairy-Free Recipe

A delicate summer tart with a crisp pastry base, filled with a melt-in-the-mouth almond cream and beautifully arranged fresh peaches. This 100% plant-based version is made without eggs or dairy thanks to Yumgo Whole. It’s the perfect way to showcase summer fruit with elegance.

Step 1: Sweet Shortcrust Pastry

  1. Mix all the dry ingredients in a large mixing bowl.
  2. Rub the dry ingredients with the margarine until you obtain a sandy texture.
  3. Mix the whole Yumgo powder with water to rehydrate it.
  4. Incorporate this mixture into the sandy dough and mix until a smooth dough forms.
  5. Wrap and chill before use.

Step 2: Almond Cream

  1. Cream the softened margarine with sugar, almond flour, and corn starch using a mixer until smooth.
  2. Rehydrate the whole Yumgo powder with water.
  3. Gradually add this mixture to the previous preparation, mixing gently without over-whipping.
  4. Transfer to a piping bag and set aside.

Step 3: Assembly

  1. Line a large tart ring or individual tart rings with the sweet pastry.
  2. Pipe the almond cream into the tart base.
  3. Bake at 160°C (320°F) for 25–30 minutes, until golden brown.
  4. Allow to cool completely at room temperature.
  5. Slice the peaches into thin wedges.
  6. Arrange them in overlapping circles, forming a rose shape from the outside toward the center.
  7. Brush with a neutral glaze to add shine and improve shelf life.
