Vegan Cinnamon Rolls – Soft and Indulgent Cinnamon Swirl Recipe

Step 1: Prepare the Vegan Dough
- Pour the lukewarm water into the bowl of a stand mixer and add the crumbled yeast.
- Add the flour, sugar, salt, and powdered whole Yumgo.
- Mix for 10 minutes: start at low speed, then gradually increase to medium speed.
- Add the margarine cut into pieces at low speed until fully incorporated.
- Gradually increase the speed until the dough completely pulls away from the sides of the bowl.
Tip: If the final dough temperature is below 24°C (75°F), let the dough rest for 40 minutes at room temperature, degas it, then chill for 2–3 hours. If the dough temperature is above 24°C (75°F), place the brioche dough directly in the refrigerator.
Step 2: Shape the Cinnamon Rolls
- Roll out the dough into a rectangle about 0.5 cm thick, then refrigerate for 30 minutes.
- Prepare the filling: whisk together the margarine, sugar, and cinnamon until smooth and homogeneous.
- Spread a thin layer of cinnamon butter over the chilled dough.
- Roll the dough tightly into a log, then seal the edge with a little water.
- Chill the log for 30 minutes to make slicing easier.
Step 3: Proofing & Baking
- Cut into even slices (about 3–4 cm thick).
- Let the rolls proof for 2½ to 3 hours at 28°C (82°F).
- Preheat the oven to 180°C (356°F) with fan/convection heat.
- Bake the cinnamon rolls until golden brown. Baking time depends on their size (approximately 18–22 minutes).
