Homemade Vegan Mayonnaise – Easy Recipe with Yumgo Yellow

Prepare a 100% plant-based mayonnaise that is smooth, creamy, and flavorful, without eggs or preservatives. Thanks to Yumgo Yellow, a plant-based egg yolk substitute, this recipe delivers a perfectly stable texture and balanced taste—ideal for sandwiches, salads, or as a side sauce.

Steps to Make Vegan Mayonnaise

  1. In a tall container, rehydrate Yumgo Yellow by mixing it with water until you obtain a smooth, fluid texture.
  2. Add mustard, vinegar and lemon juice. Mix thoroughly until well combined.
  3. Using an immersion blender, slowly incorporate the sunflower oil in a thin, steady stream.
  4. Blend for about 6 minutes until the mixture becomes thick, smooth, and creamy.
  5. Once all the oil has been incorporated, continue blending for another minute to stabilize the emulsion.

Tip

For a more flavorful version, add a pinch of salt, pepper, or fresh herbs according to taste. This vegan mayonnaise can also be used as a base for tartar sauce or homemade burger sauce.
